Grill Ventures was challenged to determine, estimate and document the viability of an aggressive food and beverage plan for a new-build hotel.

Grill Ventures conducted extensive research on the local food and beverage marketplace, the local business environment and the local consumer. Regional and national trends were also examined.
Given the background information developed, Grill Ventures was able to create sound projections for the restaurant and bar, for the hotel’s internal-driven business and external-driven potential.
Grill Ventures further estimated the banquet and catering business that would be generated by in-house groups, local groups / functions and weddings.
